Alkaline Salad Recipe:

Ingredients:

  • 1 cucumber, sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  •  1 small red onion, thinly sliced
  •  1 cup of cherry tomatoes, halved
  •  1/2 cup of sliced almonds or pumpkin seeds (optional)
  •  1 avocado, diced
  • 1/4 cup of fresh basil leaves (optional)

For the Dressing:

  •  3 tablespoons of extra-virgin olive oil
  •  2 tablespoons of fresh lemon juice
  • 1 clove of garlic, minced
  • Salt and pepper to taste

Instructions:

1.  Prepare the Salad:

  • Wash and chop the mixed leafy greens. If using kale, remove the tough stems and massage the leaves with a little olive oil to soften them.
